Menudo with C-lium Fibre

I prepared Menudo the other day with a tablespoon of C-Lium Fibre as sauce thickener. My kids and hubby loved it. By the way, you can also use C-Lium Fibre as breading for your fried chicken and pork chop. 🙂

Ingredients: 3/4 kilo pork cubed, 1/4 pork liver, diced potato, diced carrots, red bell pepper, sachet of menudo mix, potted meat, tomato sauce, and pork stock.


Cheesy Tex-Mex Nachos (C-lium Recipe)

The cheesy nachos personally prepared (for demonstration purposes) by Nutritionist Nadine Tengco after our Crossfit challenge at the Crossfit Bonifacio Global City

(Serves 8)

4 packs Soyami Soy chips Original

Tex-Mex Meat Topping
125 g ground lean beef
125 g ground chicken breast
1 tsp cider vinegar
1 tsp low sodium soy sauce
2 tsp FUEGO SPICE MIX (see recipe below)
½ tsp sea salt
¼ cup chopped onions
¼ cup chopped bell peppers
1 tbsp canola oil

Fuego Spice Mix
2 tsp ground paprika
1 tsp chili powder
½ tsp ground cumin
¼ tsp cayenne pepper
1/16 tsp ground cloves
¼ tsp garlic powder
1 tsp psyllium fiber

Combine all ingredients in a small bowl. Set aside

1. Combine meat, spice mix, cider vinegar and soy sauce. Knead and mix well.
2. In a medium non-stick pan, heat 2 tsp of the canola oil and sauté meat, breaking into small pieces with fork as it browns
3. Using a slotted spoon, transfer meat to a bowl. Discard fat. Set aside
4. With remaining 1 tsp oil, sauté onions and bell pepper until soft. Stir in the cooked ground beef. Turn off heat. Set aside

Salsa Con Queso
¼ cup grated quick melt cheese
1 small tetra pack (250ml) low-fat milk
½ tbsp psyllium fiber
1/8 tsp ground turmeric
Salt & pepper

1. Mix psyllium fiber with ¼ cup milk and water, stir well and set aside
2. In a saucepan, simmer remaining 1 cup milk and add quick melt cheese. Stir constantly until cheese completely melts
3. Add turmeric powder and stir.
4. Pour the dissolved fiber into cheese mixture and stir constantly until sauce thickens slightly.
2. Turn off heat and set aside. Sauce will thicken as it cools down. (if sauce gets too thick, add about 2 tbsp hot water)

Tex-Mex Salsa
1 ½ cups fresh tomatoes, de-seeded, chopped
2 tbsp cilantro chopped
1 tbsp lime juice
1 ½ tbsp olive oil
¼ tsp salt
½ tsp cumin
¼ cup chopped onion

Combine all ingredients together. Let stand so that flavours mix well

Assemble Tex-Mex Nachos

1. Layer Soyami chips on plate and top with Salsa con Queso
2. Add Tex-Mex meat and top with Tex-Mex salsa
