Embutido Recipe

This is my version of Embutido (photo above) from the original recipe below:

Ingredients:
500 grams ground pork 1 stalk celery, minced
1/2 cup green peas 2 tsp iodized salt
250 grams spiced ham, minced 4 segments minced garlic
1/2 cup diced sweet red bell pepper 1 egg, slightly beaten
1/2 teaspoon ground black pepper 1/4 cup flour
1 piece carrot, minced 1/2 cup raisins
1 cup diced cheese 1 tbsp sugar
1 large onion, minced

Procedure:
combine all ingredients in a large bowl. Mix well until all ingredients are thoroughly blended. Divide mixture into four parts. Roll each part into a log and wrap it in a sheet of aluminum foil. Cook the logs in a hot steamer for 45 minutes. Cool logs for 20 minutes. Unwrap logs and slice diagonally. Serve with tomato catsup.

Yield: 4 logs, each logs yields two or three servings.
